Pixar made the announcement via social media, triggering a slew of excited responses from fans.
No plot details have been revealed, but the film will be written by Stephany Folsom, who helped write Thor: Ragnarok before being denied a writer credit due to a union dispute.
Previously, Rashida Jones and her writing partner Will McCormack were attached to Toy Story 4; they left in November 2017 over "philosophical differences".
"We parted ways because of creative and, more importantly, philosophical differences," the pair said in a joint statement.
"There is so much talent at Pixar, and we remain enormous fans of their films. However, it is also a culture where women and people of colour do not have an equal creative voice."
Toy Story was released in 1995, spawning sequels in 1999 and 2010.
