If you had a few too many wines during that post-lockdown gathering over the weekend, you're probably still in the grip of your first level 2 hangover and need something delicious and non-nutritious.
Even if you're just feeling a bit vulnerable heading back to work and you need a wee pick-me-up, this is the recipe for you.
7 News published the recipe for KFC popcorn chicken nachos on Sunday, combining popcorn chicken, melted cheese, kidney beans, jalapenos, salsa, onion, guacamole and corn chips.
Yum.
The recipe serves six, meaning it's the perfect feed to share in your next level 2 government-sanctioned gathering of 10 people or less.
Better yet, it only takes 10 minutes to make - not counting the time spent sitting in the Drive-Thru, of course.
You could probably also make it with McDonald's chicken nuggets if they're more your thing.
Ingredients:
- 1 x KFC Popcorn Chicken
- 2 x 175g packets corn chips
- 420g can kidney beans
- 300g grated cheese
- 1 jar tomato salsa
- ½ a red onion
- Guacamole
- Fresh jalapenos for garnishing
Method:
- Put alternate layers of corn chips, KFC popcorn chicken, cheese and kidney beans on a baking tray and cook at 200C in a fan-forced oven for five minutes until cheese is nice and melted.
- Finely chop the red onion. Top the cooked Popcorn Chicken Nachos with tomato salsa, jalapenos, chopped red onion and guacamole, and serve.
