Crave no more for McDonalds' classic Big Breakfast with two delicious DIY versions.
For the original, fry up some chicken patties with a touch of flavourful garlic and onion seasonings and a hint of herby thyme sweetness. And the hard part's over.
Now toast up a frozen hash brown, scramble some eggs and slice up some English muffins to complete.
No grape jam? Other fruity spreads work too.
If you're looking for a fuller breakfast, plump up your scrambled eggs with juicy shiitake mushrooms, or any other mushrooms for an extra umami taste.
Ingredients
McDonald's Inspired Big Breakfast:
- 2 pcs English muffins or crumpets (split into halves)
- 1 fried hashbrown
- 2 eggs
- 2 tbsp whole milk
- 1 tbsp butter
- Pinch of salt
- Chicken sausage patty:
- 130g minced chicken
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tsp black pepper
- ½ tsp dry thyme
- 1 tbsp breadcrumbs
- 2 tbsp oil
- Salt (to taste)
McDonald's Inspired Big Breakfast with Shiitake Mushroom Scrambled Eggs:
- 2pcs Gardenia butter rolls
- 1 pc fried hashbrown
- 2 eggs
- 3 shiitake mushrooms (small diced)
- ½ sprig spring onion (sliced thinly)
- 2 tbsp whole milk
- 1 tbsp butter
- Pinch of salt
- Chicken sausage patty:
- 130 g minced chicken
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tsp black pepper
- ½ tsp dry thyme
- 1 tbsp breadcrumbs
- 2 tbsp oil
- Salt (to taste)
Instructions
1) McDonald's Inspired Big breakfast
- In a bowl, add minced chicken and mix all ingredients well.
- Using your hands, scoop a little chicken mixture and roll it to form a ball.
- Press it gently to form the patty. Set aside.
- In another bowl, whisk egg lightly with a fork.
- Add pinch of salt and 2 tbsp milk. Mix well
- In a pan over medium heat, add 1 tbsp butter.
- Add the egg mixture, leave to cook slightly before scrambling it into smaller pieces.
- Set aside. In the same pan, add cooking oil and cook chicken patty.
- Once cooked, remove to a plate lined with paper towel.
- Toast crumpets and place on a plate along with chicken patty, hashbrown and scrambled egg.
2) McDonald's Inspired Big breakfast with Shiitake Mushroom Scrambled Eggs

- On a plate place 2 butter rolls, along with chicken sausage patty, hashbrown and shiitake mushroom scrambled egg.
