Sesame oil chicken is an easy and healthy recipe. If you grew up in Asia, this would remind you of home and childhood.
In this recipe, the power of three sauces - oyster sauce, dark soy sauce and light soy sauce - is released to its full potential when combined with the sharp and earthy flavours of ginger. The Chinese cooking wine completes the dish, and the taste becomes fuller to almost savory perfection.
Season with sesame seeds and serve with warm rice for lunch or dinner.
Ingredients
Serves 4
- 600g chicken, cut into 10 to 12 pieces
- 1 tsp sesame seeds, for garnish.
For the marinade:
- 1 tbsp light soy sauce
- 0.5 tbsp sesame oil
- 50ml Chinese cooking wine.
For the sesame oil chicken:
- 4 tbsp sesame oil, for frying
- 80g ginger, julienned
- 2 tbsp light soy sauce
- 2 tsp dark soy sauce
- 2 tsp oyster sauce
- 60 ml chinese cooking wine
- 0.25 tsp ground white pepper
- 1 stalk spring onion, sliced to 2cm lengths.
Directions
1. Marinate the chicken
- Place the chicken in a bowl.
- Add the light soy sauce, sesame oil, Chinese cooking oil and white pepper into the bowl. Mix well and let it marinate for about 15 minutes.
2. Start cooking
- Heat the wok and pour in four tablespoons of sesame oil, then add the ginger and fry until fragrant.
- Add the marinated chicken and stir-fry for three to four minutes.
- Add the light soy sauce, dark soy sauce and oyster sauce, stir well and let it cook for 15 minutes or until the sauce thickens.
- Add 60ml of Chinese cooking wine and the spring onions, stir and let it cook for another five minutes. Turn off the heat and set aside.
- For a thicker sauce, let it cook for longer after adding the last ingredient.
3. Plate and serve
- Garnish with chopped spring onion and sesame seeds, then serve.
