Upon the resumption of play, the seven-time Grand Slam champion struggled to regain her rhythm, making a host of unforced errors and dropping the second set.
With a chance to serve for the match, Williams was broken by Zhu, who went on to win the final two games and close out the contest.
No. 1 seed Coco Gauff eased through her tie with Sofia Kenin, completing a clinical 6-4 6-4 win to book her place in the quarter-finals.
Gauff converted 3/7 break points and made just 18 unforced errors compared to Kenin's 32, needing under 90 minutes to secure victory against her American compatriot.
In other action, Czech Republic's Karolina Muchova trumped Elena-Gabriela Ruse of Romania 6-4 6-1, Spain's Rebeka Masarova beat Anna Blinkova 6-1 6-4, and Danka Kovinic of Montenegro got the better of the US' Lauren Davis 4-6 6-3 6-2.
